Pasta: Gluten Free

When I began a gluten free diet there were 2 things I knew would break it if I did not learn how to make them; bread and pasta!  I craved pasta and tried various gluten free packaged pastas looking for something that tasted good which I would use as a base recipe.  The only pasta that tasted remotely normal to me was the brown rice pastas but I had a real problem with paying $3-4 per bag.  I set out to find a decent gluten free pasta recipe and this is what I ended up with.

Gluten Free Pasta:
4 cups gluten free flour
2 tsp salt
1 tsp sugar
2 tbsp oil
4 eggs
1 cup water

Mix all ingrediants and knead dough.  Add water as needed for consistency.  Roll flat on a well-floured surface and cut into pasta shapes.  Boil in water with 1 tbsp oil for 20-25 minutes.  Strain and serve as desired.

I started out trying a pasta machine that I borrowed from my mom.  I hated it because it would extract about 1/2 the dough and then waste the other half and it was a real pain in the ass to clean.  I decided to roll and cut manually instead.  The first few times I made it manually I used a pizza cutter to cut small strips which worked very well, especially when you are trying to hurry the process up.  However, doesn't everyone want different shaped pasta sometimes?  I do I do!  So in a quest to think of the perfect way to cut small pasta shapes I came up with the answer- Perfection pieces!!  The game Perfection comes with various shapes that are built like tiny little cookie cutters and they are perfect sizes for small pasta.  If you dip them into oil and then punch out the shapes they work wonderfully!  In the picture I used the hexagon shape.

So there you have it- a homemade, gluten free solution to your pasta needs!
