Buffalo Chicken Garbage Wrap

I found this online and had to convert it to a gluten free version and give it a try.  I love buffalo chicken and ranch!!  I used my gluten-free pie crust recipe but omitted the sugar for the wrap.

Buffalo Chicken Garbage Wrap:

2 cups gluten free flour

1/4 tsp salt
12 tbsp cubed butter
1 egg
1+ tbsp ice water
3 boneless skinless chicken breasts cooked and cubed
Ken's Buffalo Sauce
Ken's Ranch Dipping Sauce
Shredded Mozzarella cheese


Crust for wrap:
Mix 2 cups gluten free flour and 1/4 tsp salt in a blender.  Add 12 tbsp cubed butter and pulse until crumbly.  Add 1 lightly beaten egg and pulse.  Add 1 tbsp ice water and pulse.  Check consistency and add 1/4 tsp ice water at a time and pulse until correct.  Remove the dough and knead.  Roll out on well floured surface in a rectangular shape.

Buffalo Chicken Mix:
Cook 3 boneless, skinless chicken breasts.  Remove and trim any fat remaining then cube.  Stir in desired amount of buffalo sauce.  Stir in desired amount of ranch sauce.

Prepare and Bake:
Squirt some more ranch onto the rectangular crust and pour the chicken mix on and spread out.  Add a handful of shredded mozzarella cheese.  Roll the crust up like a wrap around the chicken mix.  This is incredibly hard with gluten-free crust so be sure to have a well oiled spatula nearby to help.  I had to fold and let it break and then re-real the breaks using oiled hands.  It certainly did not look all that pretty but it tasted great! :)
Transfer to greased baking sheet and bake at 425 degrees for 25 minutes.

  1. If you wanted to make it pretty, add an egg wash or some butter. Sounds yummmmmmy!
