Ever had that nuclear chicken on a stick you get a Thai restaurants? The one that comes with the peanut sauce? I never was sure of what made it neon colored (aka nuclear to me) but what I was sure of is that it is good stuff and I wanted to make it. I came across a this recipe for citrus chicken sate with peanut sauce and I had to try it!
Citrus Chicken Sate with Peanut Sauce:
4 boneless skinless breast cut into chunks
1 cup orange juice
4 oz lemon juice
2 tbsp olive oil
1/5 tsp salt
1 tsp pepper
4 tbsp peanut butter
2 tbsp lime juice
1 tsp soy sauce (gluten free)
2 tsp brown sugar
Citrus Chicken:
Mix marinade: 1 cup orange juice, 4 oz lemon juice (freshly squeezed), 2 tbsp olive oil, 1/5 tsp salt, 1 tsp pepper. Soak the chicken chunks in marinade for the day. Place them on skewers and grill them or fry them up on the stove.
Peanut Sauce:
Whisk together 4 tbsp peanut butter, 2 tbsp lime juice, 1 tsp soy sauce and 2 tsp brown sugar. Serve with chicken.
It has a more citrus-y taste to it then what I have had a Thai restaurants but it was very good! We all liked the peanut sauce with it as well.
