One must have a good recipe for gluten-free pizza crust is one is successfully eat gluten-free. I spent sometime perfecting a crust and ensuring decent flavor and texture. This crust is thin and crispy. I would still like to find one that is thick and doughy as an alternative and mostly for cal zones.
Pizza-Crust (Gluten Free):
6 garlic cloves
1/2 tsp sugar
2/3 cup warm water
1 tsp yeast
1 1/2 cup gluten free flour mix
2 tbsp dry milk
1 tbsp italian seasoning
1 tsp cider vinegar
1 tsp olive oil
1/2 tsp salt
Place 6 garlic cloves with skin on and tossed in olive oil in the oven in a metal cake pan for 10 minutes at 350 degrees. In a small bowl, dissolve 1/2 tsp sugar in 2/3 cup warm water. Sprinkle 1 tsp yeast over top and set aside. Mix remaining ingredients in a large bowl. Add the yeast to the mixture in the large bowl and blend well to form a sticky ball. Add flour if needed to shape into ball. Spread using your palms on a greased pizza sheet. Sit in a warm area for 10 minutes. Melt 1 tbsp butter in small bowl. Remove garlic from oven and press into melted butter. Brush onto crust. Bake crust at 425 degrees for 15 minutes. Remove and add toppings, return to over for 15 minutes more.
